  1. In a high-speed blender, blend nut milk, peppermint and stevia on medium until well blended.
  2. Add cacao nibs and blend for an additional 10-15 seconds.
  3. Add dried coconut and chia and blend on low until well combined with no lumps.
  4. Pour into individual jars and chill in the refrigerator for at least 20 minutes.
