- 1 box Eat Banza Chickpea Pasta
- 2 honeynut squashes, sliced
- 2 cups brussels sprouts, sliced
- 1 onion, sliced
- 2 tbs olive oil
- 1/2 tsp fine sea salt
- 1/4 tsp black pepper
- 1/2 tsp cinnamon
- 1/4 tsp ground ginger
- 1 tbs maple syrup
- 1 tsp vanilla
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Drizzle veggies with oil, spices, ginger, and honey.
- Roast for 35 minutes until fork tender
- Cook Eat Banza Chickpea Pasta to direction
- Toss with olive and salt
- Serve veggies over pasta
